Afghani saffron rice

Afghan recipe: serves 4

  1. Fil a pot with the tapid water en add the rice. Let this soak for 3 hours.
  2. Drain the rice.
  3. Fil the pot with boiling water and add the rice.
  4. Cook for 30 minutes.
  5. Drain the rice and then put the rice back into the pot.
  6. Put the pot back onto the heat. 3-5 minutes on high heat, then on low heat for 35 minutes. Cover with a lid which is packed in a teatowel.
  7. 5 minutes before the end, heat up the oil. Add the hot oil to the rice. Cover again with the teatowel lid and let is stand for 5 minutes.
  8. Put the saffron in a small bowl and add 100 ml of hot water. Put a hand of rice in the bowl and mix.
  9. Plate the white rice on a large dish. Make a pattern of your choice with the yellow rice on top of the white rice.
