Afghan recipe: serves 4

  1. Put all the ingredients in a large pot.
  2. Bring to a boil.
  3. Turn down the heat to a simmer
  4. Let the water boil away. This could take up to 2 hours.
  5. When the water is nearly gone, add more olive oil, salt and pepper to taste.
  6. Turn up the heat so that the chicken and potatoe browns on the bottom.
  7. Serve.

  • 500 gr chicken thighs, no skin, cut into 3 cm cubes
  • 200 gr potato, peeled, quartered
  • 1 lemon, cut in half, use the juice
  • pinch of saffron
  • 1 L water
  • salt and pepper
  • olive oil
