What are saffron strands?

The strands are the stigmas of the flower and that is the saffron we use. When it is hand picked, the stigmas, strand or threads are dried after which it is ready for use.

What does saffron taste like?

Saffron has several tasting notes: semi-sweet and honey-like, floral, fresh like the sea, musky or for some even mushroomy, earthy, hay like or bitter. Everyone seems to experience it differently.

What can saffron be used for?

How to grow saffron?

The soil where you want to grow the Crocus has to be moisture permeable. Planting bulbs is done in rows. Then a slot is dug from 10 cm to 15 cm deep. Then the bulbs are planted with the point upwards. The distance between the lines should be 15 cm. The distance between the bulbs should be 10 cm to 20 cm. You can leave the bulbs in the ground for 4-5 years. And they will flower every year. After 5 years the maximum yield has been reached and you can dig up the bulbs.

Which saffron is the best?

Saffron is not all of the same quality and strength.

Saffron from Iran, Spain and Kashmir is classified into various grades according to the relative amounts of red stigma and yellow styles it contains. Grades of Iranian saffron are: “sargol” (red stigma tips only, strongest grade), “pushal” or “pushali” (red stigmata plus some yellow style, lower strength), “bunch” saffron (red stigmata plus large amount of yellow style, presented in a tiny bundle like a miniature wheatsheaf) and “konge” (yellow style only, claimed to have aroma but with very little, if any, colouring potential).

Grades of Spanish saffron are “coupé” (the strongest grade, like Iranian sargol), “mancha” (like Iranian pushal), and in order of further decreasing strength “rio”, “standard” and “sierra” saffron. The word “mancha” in the Spanish classification can have two meanings: a general grade of saffron or a very high quality Spanish-grown saffron from a specific geographical origin. Real Spanish-grown La Mancha saffron has PDO protected status and this is displayed on the product packaging.

Countries, like Afghanistan, producing less saffron do not have specialised words for different grades and may only produce one grade.

In addition to descriptions based on how the saffron is picked, saffron may be categorised under the international standard ISO 3632 after laboratory measurement of crocin (responsible for saffron’s colour), picrocrocin (taste), and safranal (fragrance or aroma) content.

What is saffron milk?

Saffron milk is milk with a few added saffron strands. You can best heat up some milk and add the saffron and some sugar. Simmer until milk is golden. Then serve.
